The best part about this is that it relies on absolutely minimal effort, literally only chopping the cabbage into 5 wedges and putting together the dark miso sauce.

Dark Miso Roasted Cabbage

Ingredients
  

  • 1 head white pointed cabbage sliced into 4-5 wedges
  • 3 tbsp vegetable oil
  • 1 tbsp dark miso paste
  • 1 tbsp Gochujang hot pepper paste
  • 1 tbsp soy sauce
  • 1,5 tsp honey
  • ½ tsp chili flakes optional
  • 1 tsp fish sauce
  • 2 tbsp sesame oil
  • 1,5 tsp sesame seeds toasted
  • 1 cup hot water
  • ½ tsp kosher salt

Instructions
 

  • Turn on an oven to 180 degrees celsius to warm up. On a stovetop on medium-high heat, heat up the oil in a large skillet or cast iron pan (one that can be placed into an oven). Place the cabbage wedges with salt sprinkled on top into the pan and sear each side until browned with the lid on so that it steams simultaneously.
  • Whilst the cabbage is cooking on the stovetop, combine the hot water, miso paste, Gochujang, soy sauce, honey, chilli flakes, and fish sauce into a bowl and mix until smooth.
  • Once the cabbage has been browned and caramelized, pour the liquid mixture over the cabbage, cover with aluminum foil, and place it into the oven to cook for 20 minutes then remove the foil and cook for an additional 20 minutes or until the cabbage is extremely soft and tender.
  • Remove from the oven and drizzle over the sesame oil and sesame seeds.

Notes

Perfect to serve as is or with noodles or rice.
