Looking for a simple and delicious way to enjoy dark miso roasted cabbage? This dish combines the nutty depth of miso and sesame with the earthy sweetness of caramelized cabbage, creating a flavorful and nutritious meal.
Creating an Umami-Rich Delight
Looking for a simple way to create an umami flavour bomb or just use us that head of cabbage laying in your fridge that needs to be used? This recipe is a great way to extract maximum flavour from an otherwise humble vegetable. This recipe brings together a nuttiness from the miso and the rich aroma of sesame oil to bring out the sweetness of cabbage through roasting. The best part about this is that it relies on absolutely minimal effort, literally only chopping the cabbage into 5 wedges and putting together the dark miso sauce.
The Art of Transformation
It’s quite incredible what heat and time can do to transform a cabbage into something that has almost no resemblance in flavour to its raw original state. Where a raw cabbage is crunchy and fibrous with little flavour on its own, a roasted cabbage is full of warm, earthy umami-ness that melts in your mouth as it softens but still has a tender bite. The combination of the dark miso pasta and sesame oil with the warm cabbage is a combination made in heaven. As the sugars in the cabbage caramelize and darken in the oven, it results in a sweetness that perfectly compliments the sauce and creates complex layers of flavours.
From Casual Gatherings to Self-Indulgent Moments
Whether you are planning on hosting a dinner and needing some inspiration for vegetarian or vegetable sides, or in need of something easy to put together for dinner, this dark miso roasted cabbage is the way to go. It presents with a wow factor and its depth of flavour makes it a stand-out dish.
Serving Suggestions to Enhance the Experience
This dish is perfect to serve alongside noodles, such as soba or udon, but I have been known to eat this on its own as well. The noodles soak up the miso and sesame sauce. This dish would also work well alongside a serving of rice or a fresh salad.
This dark miso-roasted cabbage is a testament to the power of simplicity in cooking. With a handful of ingredients and minimal effort, you can take a humble vegetable and totally transform it through the power of heat, time and just a few ingredients.
Dark Miso Roasted Cabbage
Ingredients
- 1 head white pointed cabbage sliced into 4-5 wedges
- 3 tbsp vegetable oil
- 1 tbsp dark miso paste
- 1 tbsp Gochujang hot pepper paste
- 1 tbsp soy sauce
- 1,5 tsp honey
- ½ tsp chili flakes optional
- 1 tsp fish sauce
- 2 tbsp sesame oil
- 1,5 tsp sesame seeds toasted
- 1 cup hot water
- ½ tsp kosher salt
Instructions
- Turn on an oven to 180 degrees celsius to warm up. On a stovetop on medium-high heat, heat up the oil in a large skillet or cast iron pan (one that can be placed into an oven). Place the cabbage wedges with salt sprinkled on top into the pan and sear each side until browned with the lid on so that it steams simultaneously.
- Whilst the cabbage is cooking on the stovetop, combine the hot water, miso paste, Gochujang, soy sauce, honey, chilli flakes, and fish sauce into a bowl and mix until smooth.
- Once the cabbage has been browned and caramelized, pour the liquid mixture over the cabbage, cover with aluminum foil, and place it into the oven to cook for 20 minutes then remove the foil and cook for an additional 20 minutes or until the cabbage is extremely soft and tender.
- Remove from the oven and drizzle over the sesame oil and sesame seeds.
